Passion Fruit Mojito

Passion Fruit Mojito

Ingredients

  • 8 passion fruit
  • ¼ cup fresh mint leaves, plus extra for garnish
  • 5 tablespoons granulated sugar
  • 6 oz light rum
  • 6 tablespoons lime juice (fresh)
  • 4 – 5 ice cubes, plus more for glass
  • Club soda

Instructions

  1. Cut open the passion fruit and push through a fine mesh strainer to catch all the juice, press hard against the passion fruit to also catch the pulp. Get as much juice and pulp from the passion fruit as possible. Reserve the seeds. Set the juice aside.
  2. In a cocktail mixer, muddle the mint and the sugar together to help release the oils from the mint. Add the rum, lime juice, and ice, then shake vigorously.
  3. Add ice to your glass (preferably a high ball, but not required) and divide the mixture among the glasses. Top with a splash or two of club soda and stir in the passion fruit juice/pulp. Top with mint and passion fruit seeds for garnish (can eat passion fruit seeds)

Ingredients

  • 1.5 oz Blanco Rum Havana Club Used Here
  • ½ oz Peach Simple Syrup
  • ½ Fresh Lime
  • 1.5 oz Club Soda
  • 3 sprigs Mint 1 for garnishing
  • ½ White Flesh Peach pit removed

Instructions

In a Collins glass, muddle peach and lime to a pulp

Lightly press the mint to extract its aromas and throw inside the collins glass

Add rum and syrup, top half way with crushed ice. Give this a stir, or the common swizzle method until the ice slightly dilutes and the cocktail is well distributed.

Fill the rest of the glass with crushed ice and give this a stir. Top with Soda and gently stir. Garnish with peach slice and mint!

MOSCOW MULE FLOAT

MOSCOW MULE FLOAT

INGREDIENTS

  • 6 ounces chilled ginger beer
  • 2 ½ ounces vodka*
  • 3 scoops lime sorbet (recipe below, you can use store bought but you will need to add a squeeze or two of lime to make it tart enough)
  • garnish: lime wheel & mint sprig
  • * To make this non-alcoholic, omit the vodka and add two more ounces of ginger beer.

Lime Sorbet

  • 2 cups simple syrup
  • 1 cup lime juice
  • zest from 4 limes
  • ½ cup cup water

INSTRUCTIONS

  • Add vodka and ginger beer to a child copper mug. Stir. Top with lime scoops of sorbet. Garnish with lime wheel and mint.

Lime Sorbet

  • Add 1 ¼ cup sugar and 1 ¼ cup water to saucepan on high. Heat until sugar dissolves and tale off the heat and cool the simple syrup
  • Mix in the lime juice, water and zest. Use an ice cream machine to freeze or pour into an air tight container and place in the freezer.
  • Stir mixture frequently until frozen to avoid large ice crystals from forming. Store for up to 3 months in the freezer.
