Grilled Pluot Cocktail

INGREDIENTS

  • 2 oz Hangar 1 Straight Vodka
  • ¼ oz aged balsamic vinegar
  • ¼ oz Meyer lemon juice
  • ½ oz honey syrup (2:1 honey to water)
  • 2 oz sparkling water
  • 2 small grilled pluots (skin on)
  • slices pluot (garnish)
  • extra honey syrup for grilling

INSTRUCTIONS

To grill the pluots

  1. Slice pluots in half and remove the pit. Brush with honey syrup and place flesh-side-down on the grill over a medium flame.
  2. Cook until pluots soften and start to caramelize (~5 minutes). Flip to skin-side-down and cook for another 3 minutes or so. Remove from heat and let cool.

To assemble the cocktail

  1. Place two grilled pluots (four grilled pluot halves) into the bottom of a mixing glass.
  2. Add the honey syrup and muddle, breaking apart the grilled pluots.
  3. Add the Meyer lemon juice, aged balsamic, Hangar 1 Straight Vodka, and shake for 10 seconds.
  4. Double strain over new ice into a highball glass and top with sparkling water. Garnish with a few fresh slices of pluot and serve!

For the Syrup:

½ cup sugar

½ cup water

1 teaspoon vanilla

1 teaspoon rose water

For serving:

Ice

soda water

a few drops celery bitters

fresh thyme and rose petals (if you have)

Alcohol suggestion: Gin
